Love this salad!

For all those of you in the heat of Minnesota, I thought I would share a nice salad recipe with you. It's delicious, yummy and fabulous (I know they all mean the same thing, but it is just plain good). And it uses one of my favorite vegetables- Beetroot.

Here we go. First peel and cut up some beetroot into chunks, roast in oven or steam until soft but firm. (tip-to avoid the red stained hands, I use latex gloves while peeling and slicing)


While the beetroot is cooking heat a skillet and dry roast some pine nuts- set aside.
In bowl add the still warm beetroot, pine nuts, some crumbled feta cheese, and torn up basil. Gently toss to mix. Just before serving drizzle some balsamic vinaigrette over the salad.
voila- a delicious and tasty salad to enjoy

Chesney loves to make up jokes- I have to say this one is much better then most.

I made fudge- I enjoy eating fudge but have a dickens of a time finding a recipe I really like. Obviously the kids found this one enjoyable to eat.

"Mom, can I have a cup of tea?" sweet words from my sweet boy. He does enjoy having a cuppa with his mum. His being decaf, of course.

I am certified!!

Certified to do what, you might ask? Certified to plummet to the depths of the ocean floor to explore a world most have never experienced. I can now, as scary as it may be, go out with a buddy and scuba dive on my own. I think I will just stick to going out with the diving club- safety in numbers I always say. My final dive for my certification was at Bare Island just south of Sydney. The island is where Mission Impossible 2 was filmed, so I have been told. The family came with on that day to see mommy make her dive.

Logan has been having fun with my scuba gear- when I went to put my regulator in my mouth that day it somehow was covered in chocolate from Logan putting it in his mouth. yuck.

I am now really looking forward to heading up to the Great Barrier Reef to try out my scuba skills there. Anyone want to join me?

The Sydney Opera House is one of the most recognizable structures in the world. But I bet you have never seen it like this...

We took the ferry into Sydney last weekend to the festival of lights with some friends. Every 7-10 minutes the light design changes on the Opera House. It was simply brilliant to look at.

This light display below may be a bit creepy but the kids all thought it was pretty cool. I am not sure exactly what message was the artist was trying for, but creepy fits.
With Chesney and Logan are their friends Riley and Amy.

Livin' the good life at 4


Logan turned 4 years old on May 28th and boy does he know how to celebrate. By the end of the party the boys were dancing on the furniture, see below.










Logans party was at the Wildflower Gardens. They do a wonderful nature program for the kids, they show the boys different reptiles and insects and teach them about the critters. Then they go on a nature walk and do a craft with the kids. all for the low, low price of $%&*@$ a head. and well worth it.

I have to say, Logans friends are soooo well behaved. They all played well together and there were no tantrums or whining from anyone. The party seems effortless.

Logan loves going to his preschool two days a week and has developed a great friendship with one boy in his class, Adam- They seem to be joined at the hip while at school. It is amazing to see Logan growing up and learning new things, but I do get a little ache sometimes to think of how much he has grown up.
Little lesson to learn- enjoy your children every step of the way and don't rush them in to the next phase- you can never go back.
